Come 24 March, gin lovers will be in for a treat. The Botanist gin and Fairmont Singapore’s Anti:dote bar will present their first-ever dinner collaboration: a specially curated three-course cocktail pairing dinner.
The Botanist gin, as its name suggests, comprises 22 different botanicals which gives it its characteristic herbaceous aromas. And who better to work with than the folks from modern European tapas bar Anti:dote, who frequently uses herbs from their own in-house garden?
First of a series of collaborations to come, this herb-themed dinner showcases the flavours from The Botanist’s signature botanicals in the menu for this one-night-only event. Here, the dishes and gin-based cocktails featuring The Botanist are created by head chef Tryson Quek and head craftsman Bannie Kang.

Hibiscus leaf, rice, fat-free chicken skin, parsley, matcha powder
Welcome drink—Dr Livingstone: pea, aquafaba, lemon
Starter: pan-roasted foie gras, miso snow, crispy anchovies
Herbaceous: fresh bubbles and herbs
Poached lobster with salmon, spinach, caviar
Braised wagyu rib with roasted parsnip, grain mustard, kale
Botanist Remedy: omija berry, mancino rosso, citrus
Petit four: hazelnut coco, cheese choux, strawberries, cèpe mushrooms
Shiso ganache: clementine marmalade, sable
