A recent addition to One Farrer Hotel & Spa’s dining offerings is a farm-to-table brunch spread that surprises and delights

Come Sundays, diners can head down to Little India to sample One Farrer’s special pop-up brunch, held weekly at its poolside Hawaiian-themed restaurant, Flip Flop. Located on the sixth floor of the property, the restaurant’s alfresco area serves up breezy views of the city. But if the noonday heat is too much for you, simply head indoors to enjoy your brunch in air-conditioned comfort.

Pretty views aside, the star of the show here is the brunch offerings, which is supplemented by the hotel’s rooftop farm. Going one up on many farm-to-table restaurants on our balmy isle, One Farrer boasts a fully functional 11,000 square foot farm manned by four dedicated staff members.

The commitment certainly does them merit. Their menu showcases a surprisingly broad range of fruit, vegetables and herbs that are grown and harvested onsite. Take, for instance, the African chicken salad, which features freshly farm-picked Romaine lettuce grown within the hotel compound. Other produce grown inhouse includes the passion fruit (to make passion fruit cream that’s served with pancakes), pandan leaves (a key ingredient in their pandan coconut French toast sticks) and jalapeno peppers (for homemade jalapeno pesto). The list goes on.

And does homegrown taste better? You bet it does.

Family recipes from One Farrer’s chairman Dr Richard Helfer are also featured prominently in this brunch. The Doris Dilly bread, for example, comes from a recipe passed down by Helfer’s late mother and carries her name. It is One Farrer’s rendition of the Insta-worthy avocado toast, here served topped with jalapeno pesto, smashed avocado and a poached egg, and of course, featuring fresh dill from the farm. Other delicious recipes from the family archives include Neva’s Pickled Beets, Mom’s Bread and Butter Pickles.
