Greenwood Fish Market’s World Oyster Festival returns from 1-31 July, featuring 25 types of oysters sourced from around the world.

For oyster lovers, Greenwood Fish Market’s annual World Oyster Festival is a well-anticipated one, for the chance to savour luscious lobes from across the globe. This year’s edition returns with an even wider selection of oysters—up from 22 to 25 types.

When you visit their Bukit Timah and Quayside isle outlets this month, enjoy a selection of raw oysters that includes Kumamoto oysters from the US, with their mildly briny, honeydew finish; prized oysters from France such as Fine de Claire oysters ($4.95) and Gillardeau oysters ($8.95); meaty Coffin Bay oysters ($4.95) from Australia with a sweet finish; as well as cooked oyster dishes such as lemon and herb crumbed Japanese Hiroshima oysters with truffle ragout (6 pieces for $29.95). Just as wine speaks of its terroir, each oyster bears the unique taste of its own merroir. Discovering the bivalves’ unique characteristics will be a gastronomic treat for aficionados and novices alike. Go for the tasting platter ($99 for eight pairs of chef’s selection oysters) for a lay of the land.
