This cheese production laboratory, delicatessen, osteria and bar draws you in with its fresh cheeses, flat breads and more.
For the past few years, The Mast’ of Mozzarella & Co has built a following in Rome with a cheese production laboratory, delicatessen, osteria and bar concept. It hopes to do the same in Singapore with an outpost at Frasers Tower, its first in Southeast Asia.
Led by chef Cataldo Chiloiro, formerly from Pete’s Place, Grand Hyatt, the kitchen makes mozzarella, burrata and stracciatella in-house daily. A key step is popping freeze-dried curd—brought in from the restaurant’s own buffalo farm in the Campania region—into a slight machine. Minutes later, plump and pillowy mozzarella balls emerge. The laboratory is glass-panelled so you can see the action pretty easily; even if you’re just strolling past, the see-through glass of the osteria will afford you a good view.
On the all-day dining menu, a great fresh cheese sampler to start with is Tris di Bufala ($28), starring burrata, mozzarella and special burrata which comes with toppings such as black truffles. The burrata are soft and melt-in-your-mouth, while the discs of mozzarella are juicy yet have a firm bite. Another good bet is the crostini ($16), topped with stracchiatella, mushrooms and truffles. Each bite of crisp toast and oozy, earthy cheese is a simple pleasure to sink your teeth into.
Also don’t miss their array of pinse, or Roman flatbread pizzas. In the salmone scozzese e zucchine (from $18) for instance, the light and airy crust is a perfect foil for the smoked salmon and zucchini. The mortadella scchiacciate or stuffed roman flatbread ($18) is also delicious, featuring mortadella, stracciatella, truffle and a much thinner crust with a texture akin to fried wanton skins.
For drinks to go with the meal, there’s a variety of aperitivi, classic Italian cocktails and Italian wines by the glass or bottle to choose from.
And if you’re a harried executive looking for grab-and-go breakfasts, the selection here includes Italian croissants ($4) and Sfogliatella ($2.50), a shell-shaped short crust pastry filled with ricotta cheese. At lunchtime, value set meals are also available.
