From now till 25 October, Skirt restaurant at W Singapore, Sentosa Cove is serving up a fantastic four-course wine pairing menu that promises to take you well above and beyond the run of the mill.
Priced at $188 ($138, without wines), the menu features top drops from the New World paired with quality offerings from Skirt’s chef de cuisine Jeno Lin.
To wake up your tastebuds, start with a refreshing aperitif of Veuve Clicquot Rich spiked with tea and pepper. The first dish comprises plump seared jumbo scallops topped with a dollop of caviar and served with potato and radish in a umami-laden bacon kombu dashi. It is paired with Cloudy Bay Te Koko with fantastic acidity and a lovely rounded mouthfeel.
Up next is the gorgeous duck breast on Okinawa sweet potato with asparagus and a rich, tangy morello cherry sauce, made even better with the pairing of the Terrazas Single Vineyard Malbec 2014.
But the highlight wine lovers should be keeping their eye on is the Ao Yun 2014, here beautifully paired with top shelf A5 Miyazaji rib cap and black garlic puree, spicy habanero ginger chutney and savoury braised mushroom. The wine is the result of LVMH’s search for wine nirvana in China.
Ao Yun means “flying above the clouds”, and indeed, the name is apt. The wine is produced from vineyards perched foothills of the Himalayas in north Yunnan province, near by to the fabled Shangri-La. 2014 is Ao Yun’s second vintage and is easy enough to drink young with its appealing red fruit notes, chocolate and spice, although some age will no doubt show it off even better.
Finish off with caramel popcorn sundae, paired with sweet Cloudy Bay Harvest Riesling—simple and satisfying for a sweet high.
