Bar manager Symphony Loo and head bartender Irwan Majid crafts Mediterranean-inspired cocktails like Medius Terra Fizz ($15), comprising lemongrass, ginger, soda and rosehip gin; and 3 Continents ($21), made with three types of rum (white, dark and overproof), pineapple and passionfruit.
