Dining Place by Chef Heman at Mandarin Gallery is a modern Chinese restaurant complete with two private rooms. Taking over the space that was previously Royal London Duck, the new restaurant sports chef’s ceramic sculptures and tableware either designed or handmade by him.
Chef Heman serves up a delicious modern twist of Hong Kong roasted meats and Cantonese cuisine here, such as the signature roasted Irish fat duck (from $52 for half) served with duck jus-goma sauce. This dish is accompanied by a platter of pan-fried foie gras guacamole tartlets served with pippets of balsamic reduction. To enjoy, pick up a slice of duck and eat it together with a tartlet, squirting on some balsamic to balance the richness of the duck. For us, just the duck alone, tender, crisp-skinned and glistening and eaten with a giant dollop of duck jus-goma sauce hit the spot.
We also love the pairing of chef Heman’s signature escargot with ginger sauce (from $16.80 for half a dozen), paired with a white rojak salad on the side for a combination of savoury and sweet.
Other must-try dishes include crispy scales coral cod fish with hot bean sauce ($21.90 for a single serving), which is a delicate juxtaposition of crispy skin and fall-apart medallions of cod collar. There is also the innovative crispy roasted pork with hot balsamic sauce, lychee and balsamic pearl ($23.90). The roasted pork has a light, crispy skin and flavourful meat while the hot balsamic sauce adds just a hint of heat that is complemented nicely by the sweet lychee and balsamic pearls.
The restaurant serves a wide range of dishes on its a la carte and all-day dim sum menus. On the a la carte menu, find Chef Heman’s Signatures such as roasted Irish duck with guacamole tartlet (from $42 for half), roasted meats, side dishes like herbal prawns ($18.90) and crispy mushrooms with truffle oil ($13.90), nourishing beauty collagen soups, vegetables, seafood, meats like Western braised oxtail Hainanese style ($28.90 single serving) and rice and noodles, including healthy options like chef Heman’s blackberry rice ($13.80 single serving) and his luxurious Boston lobster with bamboo noodles ($78 for 3 to 4 persons).
