2am:dessertbar’s Janice Wong puts up savoury and sweet dishes in a four-course Your World, Your Colours menu, in collaboration with Skirt’s executive sous chef Chris Hibbert. For Chef Wong, “colour becomes the clothing of expression for its presentation over a plate”. Expect daintily plated dishes like lobster mai tai, made up of sweet potato, lobster espuma and king prawn kataifi; and the rhubarb and pistachio dessert, a perfect balance of rhubarb compote, pistachio custard and champagne rose jelly.

Wan Hao Restaurant, Singapore Marriott Tang Plaza Hotel and Jeanette Aw
A marriage of Peranakan and Cantonese flavours await at Wan Hao Chinese Restaurant, Marriott Tang Plaza. The Oriental-Peranakan Fairy Tale four-course menu created by executive Chinese chef Brian Wong is inspired by Mediacorp actress Jeanette Aw’s Peranakan heritage and her whimsical illustrated story book: Sol’s World: Somebody to Love. Flavour-packed dishes such as double-boiled salted preserved vegetable with duck soup and birds’ nest dumpling will leave you wanting more.

LaBrezza, St. Regis Singapore and Lennard Yeong
At St. Regis Singapore, Masterchef Asia finalist Lennard Yeong and LaBrezza chef de cuisine Armando Aristarco had a blast melding Japanese and Italian flavours in their East Meets West:Purity menu. Check out dishy combinations here like the spaghetti, vongole e sake, a “Rummo” spaghetti paired with dry-sake drizzled vongole veraci; and tagliata di manzo, soia e sesame, a 120-day grain fed Angus beef striploin with Italian rocket, shaved parmigiano, tomatoes and soy-sesame dressing.

The Line, Shangri-La, Singapore and Pornsak
On Mondays and Wednesdays at The Line, Shangri-La Hotel, Singapore, sous chef Davian Santang will spice up the lineup at the buffet restaurant with four specially created dishes—crab meat with pomelo salad, curried seafood velouté, and barramundi with green peppercorn and kaffir lime, and soursop and raspberry pudding. The four dishes were inspired by Mediacorp host Pornsak’s childhood memories. “One of my favourite dishes is Yum Som’O (Thai pomelo salad) made by my mum. I shared with Chef Davian Santang that my mum and I would make Yum Som’O together when I was a kid,” said Pornsak. “It’s amazing that he managed to come up with four dishes from just a memory of mine.”
