Bustling Amoy Street sees a new cocktail bar entrant with Bar Native.
It highlights spirits sourced from around the region—Ceylon Arrack from Sri Lanka, rum from Chalong Bay, Thailand, and Amurut whisky from India, to name but a few.
Owner and head bartender Vijay Mudaliar, winner of the 2015 Diplomatico World Tournament Singapore Final, has developed a concise but highly intriguing cocktail menu.
Already one of its most Instagrammed drinks, Antz ($23) is a concoction of Thai rum with aged sugarcane vinegar, coconut yoghurt and salt-baked tapioca, served in an ant hill-shaped ceramic cup with crunchy ants as garnish.
Other drinks include Invisible Man ($21)—Indian whisky, banana peel, ghee, mulled stout, vanilla tobacco and ginger—and the pretty Ikura ($21), comprising sparkling sake, yuzu acid and salmon fish eggs brined in sake, vinegar and mirin.
