BarramundiReplacing Prime Society in the Dempsey Hill enclave is Portico Prime, an upscale version of the original Portico at Alexandra Road. What stands out is the exceptional use of local produce like sea bass and barramundi from Tiberias Harvest, a seafood supplier at Pulau Ubin. The fish usually reaches the modern European restaurant within two hours of harvest, and 29-year-old Singaporean executive chef Nixon Low does justice to them. The Pan-seared Pulau Ubin Barramundi ($38) offer a clear, sweet flesh, accompanied by carrot ginger purée, trout roe beurre blanc sauce, roasted ratte potatoes and semi-dried tomatoes. Another piquant dish that highlights Low’s understanding of pairing rustic and delicate flavours is the Caramelised Leek and Potato Soup ($22). The toasty brioche soaks up the comforting broth, while a dainty sliver of lightly-charred smoked eel atop it gives a small burst of salty flavour that works remarkably well with the creamy soup.
