No thanks to the patchy standard of American restaurant chains here, American food don’t always get a good rep, which is why Redbank Bar & Grill, which took over Tony Roma’s at Claymore Connect, is a pleasant surprise. Set up by John Stevens and Matt Connors, both East Coasters, Redbank offers largely East Coast favourites like the light-hearted Virignina-style Crab Cake ($18) and the addictive Oyster Biscuit ($18), a juicy, fat mollusc sandwiched between two crunchy milk biscuits. The quality cuts of American beef are the main draw here. Pick the the Ribeye ($45/300g) and Fillet Mignon ($45 / 250g), which are fired up on the restaurant’s Josper charcoal grill. The portions here are generous enough to feed a quarterback.
