If you think the Pork and Mushroom Aglio Olio ($19) at Equilibrium reminds you of a bowl of bak chor mee (minced meat noodles), you aren’t being irrelevant. The school boyish culinary chef Jayden Tay’s piquant dish—a potpourri of pasta, sautéed bacon, mushrooms, minced pork, chilli, parsley, garum, white wine vinegar, and rucola—is a cheeky Italian twist to the local favourite. There is a rather bold experimental spirit and youthful gumption here at this eatery that touts itself as a modern Italian bacaro and restaurant. We enjoyed La Bombette ($9.50), an offering of skewers of Pugliese grilled pork belly hugging a moreish mixture of grated parmesan, oregano and chilli flakes. Beef lovers should check out the Lostata di Manzo ($39), a juicy ribeye cut of New Zealand beef dry-aged for 28 days.
