Investment banker turned restaurant owner Luca Bottura has an ambition to bring the culinary landscape of Northern Italy to Singapore, with emphasis on authentic Bolognese flavours, exclusive produce, and house-made pastas, gelatos and cheeses. Many of the recipes at Bottura have been handed down through generations, such as the Polenta lasagne with traditional ragu and béchamel sauce ($18), lighter and the more easily digestible than regular pasta sheet lasagne, and the four cheese gnocchi with rocket pesto ($14), its savoury richness punctuated by the peppery rocket. We could not get enough of the egg and squid ink Tagliolini with shrimp and zucchini ($16), with strands of al dente pasta wrapped in a light creamy sauce that is accentuated by the delicate sweetness from the prawns.
