Climb the discreet staircase hidden in an indistinct corner of the Gatsby-inspired The Black Swan and you will find yourself in The Powder Room, an intimate alcove above the bustling dining area. Lo & Behold Group’s bar mentor Julian Serna, formerly from Eau de Vie in Sydney, one of the Top 50 Bars in the World, has launched a new cocktail program designed to evoke the glamour and theatricality of the Roaring Twenties. New additions to the menu include Group Serve cocktails that satisfy up to six guests, and a stronger emphasis on home-infused spirits; particularly impressive are the sous vide and fat washed flavours such as a walnut bourbon and bacon whisky.
Start the night with a toast of Vice Chairman’s Vice ($88 for Group Serve), a refreshing floral gin cocktail with lavender and camomile tea served in a glass tea cup. Playing With Fire ($21) is a pyrophile’s dream, a jazzed up version of the Flaming Lamborghini that sees your bartender ‘pulling’ a fiery stream of alcohol between two cocktail shakers. It features warm festive flavours evocative of mulled wine, thanks to its heady concoction of Martell Cordon Bleu and luscious red dates. Our favourite was the B. B. King ($21), a tribute to the late jazz legend with banana-infused whisky, smoked maple syrup, spicy barbecue bitters, and a charming little cone of sorbet made from the leftover whisky-soaked bananas.
