Things are done a little differently here at Vasco: the classic cocktail from the 1800s is revived as the Castro’ld Fashioned ($25), made with smoky bitters flavoured by soaking a small chunk of a cigar beforehand. Such inventiveness doesn’t come as a surprise when you find out that the owners of this newest Latin-inspired cocktail bar, Joel Fraser and Christian Hartmann, were both formerly from The Cufflink Club. Executive chef Andrew Walsh offers small, easy to eat portions on the menu such as the chicken ($23) and prawn ($25) pinchos—skewered chunks of tender meat and seafood seasoned with the obligatory South American spice and citrus flavours—which even come with dainty cutlery to match.
