The Bar & Billiard Room at Raffles Hotel has launched a new menu with a focus on rare whiskies and moreish bar bites. Restaurant and bar operations manager Randolph Velasco, previously from Raffles Hotel in Dubai, played a huge role in creating the bar’s new cocktail menu. Fans of single malts should check out the Bowmore 13 Year Old Isle of Islay Single Malt ($30/40ml) and the Isle of Jura 15 Year Old Islands Single Malt ($24/40ml). We loved the BBR 1896, a cocktail made of Bourbon whiskey, smoky Scotch, orange slices, angostura bitter, palm sugar and chamomile tea ($26) for its hint of smokiness and strong notes.
For a lighter option, try the Santa Barbara ($26), a blend of Bourbon whiskey, agave sec, grapefruit juice, anise and fig syrup. The sour and fruity notes will appeal to those in search of a refreshing tipple. Do order the Mixed Platter ($27) with a selection of cold cuts and cheese, and the Crabmeat Cigar ($19) to go with your drams.
