Standard Japanese fare is done a little differently at Ginzawa. The Tempura Moriawase ($25) includes uni tempura, which is a perfect pairing of crunchy bread crumbs and the soft, creamy and umami sea urchin flesh inside. Chef Donny Tan knows how to play with flavours and textures while showing restraint; a skill clearly shown in dishes like the grilled snapper or Tai Moto Yaki ($22), where squid rings stuffed with shisamo roe offer a piquant interplay of textures. For dinner, we recommend going for the omakase option. During lunch, the generously portioned set meals are worth trying, such as the Tokusen Hokkai Chirashi Don ($50) and Kurobuta Braised Pork Don ($35) (a homey dish Tan learnt from his Japanese wife) served with chawanmushi, miso soup and dessert.
